In our three dimensional world you cannot plot the positions of the Sun and Moon over the Earth, using a two dimensional Mercator map, and expect your analysis to get anything other wildly incorrect and fantastically nonsensical calculations/results.
The tools your used, SunCalc and MoonCal, both use Mercator projection maps.

Dr. Zack (FLAT EARTH | Eclipse 2017 - 100% DEBUNKED) he deleted his video just 2-days after it was published, as it was resoundingly proven to be false by several globe Earth supporters.
Fact:
The Mercator projection is a cylindrical map projection presented by the Flemish geographer and cartographer Gerardus Mercator in 1569.
Lines of constant bearing (rhumb lines) are straight, aiding navigation. Areas inflate with latitude, becoming so extreme that the map cannot show the poles.
The Mercator projection is sometimes inappropriately used in atlases for maps of the world, and for wall-maps as area distortions are significant towards the polar regions. The ellipses of distortion appear as circles (indicating conformity) but increase in size away from the equator (indicating area distortion). This exaggeration of area as latitude increases makes Greenland appear to be as large as South America when, in fact, it is only one eight of the size.
The Mercator projection portrays Greenland as larger than Australia; in actuality, Australia is more than three and a half times larger than Greenland. As on all map projections, shapes or sizes are distortions of the true layout of the Earth's surface. The Mercator projection exaggerates areas far from the equator.
